Moink in the Wild: Guacamole Burgers

We were happy to partner with Emily at My Everyday Table for a delicious and easy Guacamole Burgers recipe!

Guacamole Burgers are a family favorite! Easy griddled (or grilled) burgers are piled high with an easy guacamole and served with raw veggies and grapes. It’s a satisfying and colorful meal!

This is one good burger. But ok, there are few burgers that I don’t like! The real question is this: are you team grill or team griddled when it comes to burgers? I always assumed I was team grill but after making these guacamole burgers on the stove with a touch of butter….I’m changing my mind. It gives the burgers SUCH great flavor. But there are more dishes to do, which is disappointing, but flavor > dishes.

These guacamole burgers are so rich and satisfying, that you don’t need much when it comes to side dishes. You could certainly roast some sweet potatoes or whip up a coleslaw, or keep it simple with some fresh veggies and healthy greek yogurt veggie dip (takes less than 5 minutes!). I’m telling you, the burger will steal the show so the sides aren’t as important.

WHAT ARE GUACAMOLE BURGERS?

Oh they are soooooo delicious. A griddled burger is piled high with a slice of cheese and my favorite, easy guacamole. A slice or two of red onion is all it needs to reach perfection.

I like to keep guacamole really simple with a touch of citrus and salt. You could also add a little minced garlic and chopped cilantro.  If you really want to save time, you could use your favorite pre-made guacamole.

GUACAMOLE BURGERS

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Yield: 4 servings

DESCRIPTION

Guacamole Burgers are a family favorite! Easy griddled (or grilled) burgers are piled high with an easy guacamole and served with raw veggies and grapes. It’s a satisfying and colorful meal!

INGREDIENTS

  • 2 lbs. ground beef
  • 1 1/4 tsp. salt, divided
  • 1/2 tsp. pepper
  • 2 Tbsp. butter
  • 1 large avocado
  • 1/4 red onion
  • 6 buns
  • 6 slices cheese
  • baby carrots
  • 1 red or yellow pepper
  • 1 small cucumber
  • veggie dip
  • grapes

INSTRUCTIONS

  1. Prepare ingredients:
    Make dip if making it from scratch.
    Wash and slice pepper and cucumber.
    Thinly slice red onion.
    Mash avocado with 1 Tbsp. lemon juice and 1/4 tsp. salt.
  2. Divide meat into 5-6 patties and lightly form into a disc shape while rotating in your hands. You don’t want to overwork the meat, so be gentle with it! When the burger is about 1 inch thick, create an indent in the middle so the burger doesn’t puff up too much while cooking. Set aside on a platter.
  3. Heat a large pan (cast iron if you have it) over medium-high heat. Add butter to the pan and when the butter is hot, season burgers with 1 tsp. salt and 1/2 tsp. pepper on both sides and place into pan with a little room between burgers. (Work in batches if you need to.) Cook for 3-5 minutes and flip over, add a slice of cheese, and cook for another 3-5 minutes. (General rule of thumb is: 6 minutes for a medium rare burger, 10 minutes for well done.)
  4. While burgers cook, toast buns under broiler for 1-2 minutes, until golden brown.
  5. Top burgers with guacamole and red onion slices. Serve with veggies, dip, and grapes.

NOTES

  • Get your kids involved, they can: mix together guacamole, arrange veggies on a platter, help layer their burger.
  • Nutrition facts do not include side dishes.
